You’re going to love this recipe!  


I don’t know about you, but my family loves soup on a cold day!  we usually just throw together some Chili Beef Potato soup... ( that my kids use to love, but I think we’ve made to often. ).  A few year back, I decided to try the soup from the Olive Garden. And let’s admit it, all you can eat soup, salad and bread sticks sounds good to me right about now.  Anyone else? 

At first, my seriously picky eater, Elizabeth did not want to try it because it had kale in it. After some persuading, Devin finally got her to try it, I could deal with asking anymore.   

Ive shared my recipe with many friends, who say

“wow, this is so much better than the Olive Garden”. And, I agree, it is!

So, here is the recipe for this delicious soup:

  • 1 pound bulk mild Italian sausage

  • 1 1/4 teaspoons crushed red pepper flakes ( who am I kidding, I add a lot of this ) a

  • 4 slices bacon, cut into 1/2 inch pieces

  • 1 large onion, diced

  • 1 tablespoon minced garlic ( or 2 or 3 )

  • 5 (13.75 ounce) cans chicken broth

  • 6 potatoes, thinly sliced ( I sometimes add more )

  • 1 cup heavy cream ( again, I sometimes add more )

  • 1/4 bunch fresh kale tough stems removed

Allow to simmer for at least 30 minutes.  And, add the right before serving.
